Keep doors closed as much as possible, move the most valuable or sensitive product to a working unit, and keep an eye on product temperatures. Food safety guidance generally calls for keeping refrigerated food at 41°F or below. Check with your local health authority for the rules that apply to you.

Commercial kitchens are hard on refrigeration. Grease and dust coat condenser coils, and doors open hundreds of times a day. Regular coil cleaning, gasket checks and drain service help equipment last longer.
